Two master theses on the topic: Microbial degradation of indigestible components of the human diet.

Food processing, oxidation processes and reactions with reducing sugars (Maillard reaction) result in the covalent modification of proteins. While numerous individual oxidized and glycated amino acids have already been analyzed qualitatively and quantitatively in foods, knowledge about the nutritional consequences of consuming such products, especially advanced glycation end products (AGEs), is still very fragmentary. This includes knowledge about bacterial digestibility of the mostly non-absorbable amino acids. In our laboratory we are working on how these amino acids are degraded by microorganisms in the intestine and in the environment as well as to understand the molecular mechanisms behind.

Zwei Meisterarbeiten zum Thema: Mikrobieller Abbau unverdaulicher Bestandteile der menschlichen Nahrung.

Bei der Lebensmittelverarbeitung kommt es durch Oxidationsprozesse und Reaktionen mit reduzierenden Zuckern (Maillard-Reaktion) zur kovalenten Modifizierung von Proteinen. Während bereits zahlreiche einzelne oxidierte und glykierte Aminosäuren qualitativ und quantitativ in Lebensmitteln analysiert wurden, ist das Wissen um die ernährungsphysiologischen Folgen des Verzehrs solcher Produkte, insbesondere der advanced glycation end products (AGEs), noch sehr lückenhaft. Dies schließt auch Kenntnisse um eine bakterielle Abbaubarkeit in vivo der meist nicht absorbierbaren Aminosäuren mit ein. In unserem Labor beschäftigen wir uns damit wie diese Aminosäuren im Darm und in der Umwelt durch Bakterien abgebaut werden und die molekularen Mechanismen dahinter verstehen.
